“Fried” Chicken and Waffles

Yeah, I know waffles are a breakfast food and chicken is entirely not. Waffles are sweet and chicken is savory, yet the two flavors combine seamlessly. The fluffy texture of the waffles along with the crunchy and moist chicken is sensational. Don’t just trust me on this one – try it for yourself. Step out of your comfort zone. They don’t call this soul food for nothing.

Instructions

Make the chicken :
  • Preheat oven to 375 degrees. Line a baking sheet with foil.
  • Put panko in a medium fry pan and drizzle with olive oil. Toast over medium heat until golden brown, stirring occasionally to prevent burning. Set aside.
  • Season chicken strips with salt, pepper and mustard powder.
  • In a medium bowl, whisk together egg, honey, mustard and soy milk.
  • Dredge chicken in flour and shake off excess. Then dip in egg mixture and let excess drip off. Finally, coat chicken with toasted panko, pressing to adhere.
  • Place chicken on prepared baking sheet and bake until cooked through and golden brown, about 15-20 minutes.
Make the waffles :
  • Preheat a Belgian-style waffle iron.
  • In a large bowl, whisk together flour, baking powder, and salt. In another bowl, whisk together eggs, soy milk, oil, remaining 1/4 cup sugar, baking soda, and vanilla. Whisk wet ingredients into dry mixture just until combined.
  • Ladle 1 cup batter into waffle iron. Cook until golden and crisp, about 6 minutes. Repeat with remaining batter, whisking between batches for even cooking. Serve warm.
Make the salad :
  • In a large bowl, whisk together olive oil, lemon juice and honey.
  • Season with salt and pepper to taste. Add spinach to bowl and toss to coat.
To assemble :
  • Place 1-2 waffles on a plate. Top with a few chicken strips and a few spinach leaves. Drizzle with pure maple syrup just before serving.

  • 1⅓ cups panko bread crumbs
  • 1 tablespoon olive oil
  • 1 pound thin chicken cutlets, cut into 1” thick strips
  • sea salt and freshly ground black pepper, to taste
  • 2 teaspoon mustard
  • 1 egg
  • 1 tablespoon honey
  • 2 tablespoons soy milk
  • ½ cup flour
Waffles :
  • 1/2 cup sugar
  • 3 cups whole-wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 4 large eggs
  • 3 1/2 cups soy milk
  • 1/2 cup extra-virgin olive oil
  • 1/2 teaspoon baking soda
  • 2 teaspoons pure vanilla extract
  • Pure maple syrup
Salad :
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • ½ tablespoon honey
  • sea salt and freshly ground black pepper, to taste
  • 2 cups fresh spinach
